The second life of the apostates

 

Personally, I rarely manage to shop or even cook in such a way that there are no leftovers - this is definitely something that could be improved.

 

But if there is anything left over, I still want to give the treasures their proper purpose and give them a second, dazzling life.

 

The high art of cooking with leftovers is not to expose them as such, and not to use them to make grayish, mushy stews that end up in the trash because everyone turns their noses up at their indefinable taste, smell and consistency, but rather to conjure up fine soups, delicious gratins or aromatic compotes.

This may take some getting used to at first - not writing a shopping list with the things we need for the dish that springs from our imagination, but first looking at what the fridge would have to offer us anyway and adapting the next culinary excursion accordingly.

 

We can also learn this for life - look at what is there, first of all put what is there in the best possible light and only then get what we think we need from outside.
