I love the recipes from hobby chef Chris Washington on his platform Vegane Wunder. He completely dispels the notion that a vegan diet is first and foremost a mental decision and gives it a good dose of sensuality and passion. The crowning glory is his vegan goose leg, which has triggered internet hype. Now we wanted to find out...

 

For a long time, I couldn't understand why people "recreate" meat after deciding to go vegan. It's now clear to me - it's the consistency that vegan dishes simply can't normally match and it's also what makes such a treat so sensual.

That's why I wanted to see for myself how a vegan leg of goose works, how it tastes and whether it can keep up with a real one.

So here is the recipe from Vegane Wunder:

 

Vegan leg of goose according to Chris Washington

500 g oyster mushrooms

4 layers of rice paper

2 tbsp cornflour + 4 tbsp cold water

 

Oyster mushroom spice mix:

3 tbsp soy sauce

½ tsp mugwort

½ tsp cumin

1 tsp paprika powder

3 tablespoons oil

1 garlic clove

 

Marinade:

2 tablespoons oil

½ - 1 tsp salt

½ tbsp tomato puree

Black pepper

Tbsp maple syrup

 

🍗 Clean the oyster mushrooms with a brush, pluck into thin threads (the thinner the threads are plucked, the better the result) and place in a large bowl. Mix all the ingredients for the oyster mushroom spice mix together, pour over the oyster mushrooms and mix everything well.

🍗 Place the oyster mushroom threads in a pan and fry over a medium heat for approx. 8 minutes. Mix the cornflour with cold water, add to the pan and fry briefly until the mixture comes together.

🍗 Moisten the rice paper with water (moistening the water makes the rice paper soft and pliable), place half of the mushroom mixture on the moistened rice paper, poke a chopstick through the middle of the mushroom mixture, then fold first from top to bottom and then sideways. To make the legs firmer and hold together better, wrap them in another layer of damp rice paper and then place them on a baking tray.

🍗 Mix all the ingredients for the marinade in a small bowl and then brush onto both sides of the legs using a brush. Bake them in the oven at 190 degrees for approx. 30 - 40 minutes (until they are nice and crispy). Enjoy afterwards!

 

Our experience

We are totally thrilled!

Because it was not so easy to get the right quantity of oyster mushrooms, we used about half king oyster mushrooms. This is no problem at all - they can be broken down into their fibers just like oyster mushrooms (although not quite as finely) and have a wonderful taste of their own. However, you really do need to take your time - cutting up the mushrooms takes longer than we originally expected.

We would bake with hot air or convection air, then the consistency of the crispy crust works.

The combination with the inside is truly intergalactic. Warmest, crispiest recommendation!!! 💚
