The taste of rhubarb divides opinion - which is why we opted for the syrup version. It is so wonderfully fresh and unfolds its tart notes depending on the drink added. With soda or sparkling wine, it's a delicious aperitif that leaves you wanting more. Yes, and of course rhubarb bara is also a must.

It strengthens the immune system, normalizes blood pressure, aids digestion and combats cell damage - in other words, it is a superfood.

But that's not all, it also has a very interesting taste and can be used in many different ways. To get you started, we have chosen a syrup recipe that shows it off to its best advantage.

To get you in the mood, however, what must come must come: Have fun with Rhabarberbara and her barber barbarians!

Recipe

2 kg rhubarb (we recommend red-stemmed raspberry rhubarb - also because of the color)

2 l water

500 g sugar

Juice of one lemon (or two)

🍓 Clean the rhubarb and cut into approx. 2 cm pieces

🍓 Cook for approx. ½ hour with the 2 l of water provided over a low heat

🍓 Sieve through a cloth and bring to the boil again with sugar and lemon juice

🍓 Simmer for another ½ hour, reduce to approx. 700 ml

🍓 Pour into prepared clean bottles while still hot and enjoy

The syrup will keep for a good 10 months in a dark place.

It is suitable for sprinkling on various drinks, with ice cream or on pancakes.

There are no limits to your imagination. Vanilla, cinnamon or aniseed can also enhance its flavor.

Have fun!!!
