Today I had such a craving for herbal soup, but hadn't prepared anything for it. So I went outside and plucked some goutweed, which is spreading like wildfire, nettle tops and a few wild garlic leaves from the three little plants I planted last spring. Eh violá, within a few minutes the soup was ready.

 

I checked the leaves briefly, found a mini-snail, which I immediately put back into the greenery, and washed them in a coarse sieve.

Then I sautéed my last onion in small cubes in a little vegetable oil in the pan, added the leaves and let them collapse. Meanwhile, I heated water in the kettle, poured it over the leaves and let it simmer briefly.

I chopped the whole thing with a hand blender, added some liquid cream and crème fraiche and potato starch to bind the soup. Then I seasoned the soup with salt and pepper. And enjoyed them with some sour cream. Bon Appetit! 💚
