A small bottleneck in the fridge led me to the summer hit of 2023 - gazpacho

The Andalusian cold vegetable soup gave me a wonderful Sunday evening and made me an absolute fan of my nephew's cooking.

After a long day of swimming, we recently came home, nephew (who is a virtuoso top chef) in tow, hungry for something fresh that wouldn't keep us occupied for too long but would still fill us up, and last Sunday we bustled around the kitchen checking the contents of the fridge to see if they were suitable.

The talented chef quickly suggested gazpacho. I was briefly confused - isn't that complicated?

I hadn't finished thinking about it when my daughter and nephew were already emptying the vegetable drawer.

 

So we need:

(in our case it was not so precisely measured, to be able to estimate the ratios, I stick approximately to a real recipe)

1 kg tomatoes

1-2 peppers

½ Cucumber

2 garlic cloves

A few dashes of lemon juice

Salt, pepper, chili

A little olive oil

1 pinch of sugar

If you like: onion, basil

Garnish: apple, (salted) lemon, spring onion, paprika, herbs (to taste)

 

🍅 We diced all the ingredients at a monkey-like speed

🍅 Mixing was a bit tedious due to inadequate equipment (a somewhat outdated hand blender) - can be optimized with more modern equipment

🍅 Then season to taste with salt, pepper, chili, sugar, lemon juice and olive oil

🍅 Finely chop an apple, a salted lemon, herbs and a spring onion as a garnish

🍅 Drizzle with olive oil and place in a small bowl for free removal

🍅 Finally, we threw some ice cubes into the soup and blended it again.

🍅 I baked frozen baguette to go with it.

 

A delicious meal that I'll be whipping up again soon - this could be the summer hit of 2023. 💚☀
