What is the culinary equivalent of the warm glow of late summer? That's right! Stewed apples.

Before summer melts into gold in the grand finale, it shows its most lush side. A host of apple trees can barely bear the fruity, juicy load and are waiting for redemption - which we are happy to provide, as the sensual fruits let us soak up the light.

 

If you want to breathe some warm aroma back into your living room, it's best to get to work fresh, grab some cinnamon and cloves and gather whatever apples you can find. They can be anything, just not from the supermarket, because this is all about aroma.

A trip to the farmer's market, to the neighbor or even climbing the apple tree will definitely pay off in this case, because the quality of the apple is absolutely crucial for the result.

What we need

per 1 kg of apples

5 cloves

2 cinnamon sticks

Juice ½ lemon

1-2 tbsp brown sugar or honey to taste

if you like: a dash of rum, nuts, raisins

 

🍎 Core the apples and cut into large cubes (you can also peel them if you like)

🍎 Bring to the boil with all the ingredients and a little water (maximum ¼ l)

🍎 Depending on the water content of the apples and your expectations of the result, simmer gently with or without the lid for 15-20 minutes.

 

So simple and sooooooooo good!!!

If you don't want to emphasize the apple flavour, you can replace some of the water with rum and add raisins and nuts. Be sure to remove the cloves and cinnamon sticks from the compote before eating. 💚
